La Caille Just got a Whole Lot Sweeter


La Caille is the premier French Restaurant in Salt Lake City and is proud to introduce Rebecca Millican as their new French pastry chef.  Rebecca was the Pastry Chef Instructor at the Institute of Culinary Education in New York City for 10 years. Prior to joining the faculty at ICE, Rebecca worked at the 4-star Ryland Inn in Whitehouse, NJ, L'Espinasse in New York and Park Pastries in Hoboken. In addition to chocolate work, her specialties include wedding cakes, candy making, and gingerbread houses.
She has had her work featured on television and in print. She has appeared on the Better Homes and Gardens television show, the Food Network, and Good Day New York. Her gingerbread houses and holiday specialties have also been featured in The New York Post and Country Living Gardener magazine. In 2005 Rebecca coached a team of students to a first place ribbon in the "Gingerbread on Broadway" competition held at the New York Marriott Marquis Hotel. When Rebecca returned to Salt Lake City, she became an acclaimed chocolatier and continued to sharpen her pastry craft.

La Caille invested in a pastry chef because they value all courses of the meal. It has been Rebecca’s experience that in many establishments — even fine dining — the dessert is an afterthought. La Caille wants to give you the best experience from beginning to end. This impression includes lovely grounds, impeccable service, and of course a five-star dining experience.

Rebecca is excited to introduce desserts that complement the seasonal menu of La Caille. For the fall and winter season, Rebecca has created a delicious, tantalizing chocolate and caramel cake. The richness of the cake is perfectly balanced with a baked grapefruit infused with rosemary. The pumpkin gingerbread tiramisu has become the staff favorite. Other seasonal favorites will include peppermint and eggnog themed items. A twist on a traditional Buche De Noel is also expected to premier at La Caille this winter.

To celebrate the upcoming holiday season and the arrival of Rebecca, La Caille is hosting their third annual Lights On Celebration. You are invited to visit La Caille and stroll the grounds trimmed  in holiday sparkling lights. During the celebration, guests are invited to sip hot chocolate and taste Rebecca’s famous homemade marshmallows and cookies.

The holidays are a time for family and friends to enjoy each other’s company. The time you spend together will be remembered for years. La Caille’s Sustainability

La Caille has been an innovator in culinary arts in Salt Lake for thirty years.  La Caille is setting the culinary pace again by investing in sustainable farm-to-table dining.  Farm-to-table is a commitment not only to sustainability, but also to fine dining. The commitment and process allows La Caille to harvest at the peak of flavor. This perfected harvesting time allows La Caille’s Executive Chef Billy Sotelo to create beautiful seasonal dishes that add to the La Caille experience. These entrees from the garden truly show La Caille’s pledge to the guest’s experience.

La Caille’s commitment to farm-to-table dining is best seen in the garden and aquaponics center. This aquaponics system and kitchen garden are headed by gardener, Ryan Richardson. “Ritchie” is an advocate of green gardening and has researched the best ways to grow herbs and vegetables for the kitchen in order to improve La Caille’s sustainability.


The aquaponics system utilizes the power of one living organism to nourish another. The system relies on fish to produce nutrients that are fed to the plants to kick start the growing process. The system allows La Caille to grow a sustainable garden, and the plants grow more quickly because of the high nutrients. This fast growth rate is tied to the aquaponics system and the green compost that Ritchie formulated. The compost is from the organic matter collected in the kitchen and La Caille’s grounds. Statistics show that up to 10% of the food purchased in restaurants is thrown away. At La Caille, this waste is put to good use and turned into valuable compost used to grow stronger and more fruitful gardens. The garden uses this organic compost and hydroponic nutrients to grow flavorful vegetables and herbs. These nutrients yield plants that are harvested up to twice as fast than traditional chemical methods.


La Caille is now able to grow all the lettuce used for its salads, many side dishes, and the micro greens used in the entrees. If there is a request to utilize the garden for an event, La Caille will work with you to create a delicious seasonal menu. Fall brides will enjoy fresh herbs and pumpkins while summer brides may serve guests eggplant, squash, beans, and sun-ripened tomatoes. 

La Caille is committed to beautiful events and cuisine, with farm-to-table cooking adding to the culinary experience. This effort requires La Caille’s culinary staff to not only create a delicious menu, but also think seasonally. When guests arrive, La Caille’s beauty greats them at the gate and continues up the tree-lined drive. Just through the break in the trees, guests catch their first glimpse of La Caille’s regal peacocks roaming the grounds. Stepping out of the car is like stepping into a mid-summer night’s dream. 

Once inside the restaurant, guests are escorted into distinctive dining rooms found on all three floors of the chateau with views of the vast and manicured grounds. La Caille’s dining rooms are romantic and create the ideal setting to enjoy the decedent offerings- renowned for its farm-to-table ingredients. Chef Billy Sotelo creates seasonal menus that complement the sights and smells that accompany each season. For the summer, the menu will feature seasonal vegetables grown on the property, fresh specialty seafood, and wine pairing suggestions. These selections and carefully chosen ingredients are sure to delight even the most sensitive of palettes. This style of cooking ensures that the summer menu comes together in a symphony of crafted flavors. 

La Caille’s farm-to-table cooking is an experience to revel in for any guest. La Caille’s ingredients are specially grown in the garden and used to create exquisite dishes and entrees. Many of the summer menu items are specially tailored around the vegetables and herbs carefully grown in the garden. When visiting La Caille, guests will truly experience the tastes of summer. 

La Caille is also well known for their unique, sumptuous summer seafood offerings. This seafood platter is elegantly presented to guests and includes lobster tail, oysters, and other deliciously prepared treasures of the sea; garnished with expertly chosen herbs and spices to enhance the flavors. Chef Sotelo’s preparation of this dish perfectly replicates the fresh flavors thought only to exist in fine coastal dining. 

La Caille’s seafood platter is further enhanced by a selection of wines specifically chosen to complement the summer menu. The wine flight is a trio of rose wines recommended to best match many of La Caille’s summer menu items, incorporating light and fresh flavors and ranging from dry to sweet.  Sample a full body rose wine with the seafood platter and later delight your pallet with a delicate rose as you indulge in the decadently sweet yet sophisticated crème brulee.
